Mashed Potatoes

Mashed Potatoes

Enough potatoes to fill your saucepan cut into chunks with skin still on.

½-1 Stick of butter depending on size of pan

~1 Cup sour cream

½ T Seasoned Salt

1 T Pepper

½ T Rosemarry

½ T Thyme

1 Clove Garlic

½-1 Cup grated Parmesan cheese (or whatever is available)

Boil potatoes until soft. Drain off water. Add remaining ingredients and mash with a fork or fancy potatoes masher. I like to serve mashed potatoes think and lumpy so it’s almost a creamy baked potato. If you want them creamer use some milk and a mixer.

Notes: These are certainly not the healthiest potatoes, but they sure taste good. Speaking of healthy my wife and other people I know (including the governmental nutrition agency) have told me that a potato is a starch not a vegetable. Let me get set the record straight, POTATOES ARE VEGETABLES! The debate my wife and I always have is whether or not I’ve had my “5 servings of fruits and veggies” for the day. If I’ve had a potato I say yes and she says no. What she means to ask is if I’ve had a non-starch, non-carbohydrate, vegetable. Because they are a starch, they do not meet the requirement for your “5 servings of fruits and veggies”. Botanically though potatoes are a vegetable.
