Hash

Hash

Roughly 5 lbs beef

3lbs pork

2.5 lbs onions

1lb butter

Flavors

Salt

Red pepper flakes

Coarse black pepper

Worchestershire

Sage

Sneak a bit of soy sauce

Add additional butter if needed

Slow cook meats 6 hours with salt. Add the rest for 3 more hours. Mix with electric blender if necessary to get a good hash consistency. Serve over rice without BBQ Sauce

Notes: At any point in time you can pretty much be guaranteed of two things in the farm’s kitchen, Cheerwine and Hash. Dad makes large batches and freezes it so there is always something to eat. We usually serve it with Fancy rice (the 50 cent rice-r-ronnie knock-off from the dollar store).

Another note on hash is that it is often served at BBQ’s in the south and I almost always see people putting BBQ sauce on their hash. This is wrong! Hash has plenty of flavoring on it’s on and is meant to be eaten sans sauce. Save the sauces for your pulled pork.
