Blackberry Cobbler
3-4 cups blackberries
¾ Cups sugar (maybe a little more if the berries are bitter)
3-4 Tablespoons of flour
Crust
1 ¾ cups flour
3 T sugar
1 ½ tsp baking powder
¾ tsp salt
¼ cup shortening
½ cup whipping cream
½ cup butter milk
Preheat oven to 425. Mix berries, sugar, and flour in dutch oven or 8 x 8 casserole dish. Make topping by combining first four ingredients then cutting in the shortening with a pastry blender until crumbly. Stir in whipping cream and buttermilk and mix until just blended. Place spoonfuls closely together on top of berries. Paint with melted butter and a little sugar. Bake uncovered 30 minutes. Serve with vanilla ice cream or whipped cream or both.
